I haven’t made too many blue cheese dressings. I love blue cheese but must are so thick and a little goes a long way. This one is not and its fabulous on simple greens and even better with this Cobb. Special thanks to Toby for the chicken request.


  • 1/4c EVOO
  • 3T White Balsamic vinegar
  • 2T chopped chives
  • 2T chopped basil
  • 1T Shallot
  • 1oz blue cheese
  • 2t Dijon
  • Flake sea salt and freshly ground pepper to taste
  • 8c spring mix or greens of choice
  • 1/2c toasted chopped walnuts
  • 1c rotisserie chicken chopped
  • ½c shaved fennel
  • 1 large diced Fuji apple
  • 1 large diced avocado
  • 2 shredded carrots (rainbow if you have them)


  1. Whisk/Emulisfy, Toss & Enjoy
